Appetizer

Spinach and Pink Grapefruit Salad

Spinach and Pink Grapefruit Salad

Ingredients:

  • 6 cups baby spinach leaves
  • 1 small pink grapefruit, peeled, pith removed, segmented and sliced
  • 1 small red onion, thinly sliced
  • 1 cup mushrooms, sliced
  • 1/2 cup fresh raspberries
  • 2 tbsp walnut pieces, chopped

 

Directions:

  1. Rinse, drain and dry baby spinach leaves; arrange on 4 salad plates.
  2. Arrange grapefruit pieces on top, followed by onion slivers and mushroom slices. Scatter raspberries and walnut pieces on top.
  3. Drizzle with 2 tablespoons of your favorite low-fat or fat-free citrus or raspberry vinaigrette.

 

Main Dish

Pomegranate Duck

Pomegranate Duck

Ingredients:

  • 1 pound boneless duck breast, skin removed
  • 1/2 teaspoon kosher salt
  • 2 teaspoons extra-virgin olive oil
  • 1 small shallot, finely chopped
  • 1 cup pomegranate juice
  • 1/4 cup reduced-sodium chicken broth
  • 1 teaspoon cornstarch
  • 2 teaspoons chopped fresh parsley, for garnish (optional)

Directions:

  1. Preheat oven to 235°C.
  2. Sprinkle duck with salt. Heat oil in a medium skillet over medium-high heat. Add the duck and cook until browned on both sides, 3 to 4 minutes per side. Transfer the duck to a small baking dish and roast until a thermometer inserted into the thickest part registers 65°C, 8 to 12 minutes for medium, depending on the size of the breast. Transfer to a cutting board; let rest 5 minutes.
  3. While the duck is roasting, return the pan to medium-high heat. Add shallot and cook, stirring constantly, until fragrant, 30 seconds-1 minute. Add pomegranate juice and bring to a boil. Reduce heat to a simmer; cook until reduced by half, 1 to 2 minutes. Stir broth and cornstarch in a small bowl until the cornstarch dissolves. Add to the pan. Bring to a boil, stirring constantly. Reduce heat to a simmer and cook, stirring, until the sauce is thickened, 1-2 minutes. When the duck has finished resting, pour any collected juices into the sauce and stir to sign.
  4. Thinly slice the duck; serve topped with the pomegranate sauce. Garnish with parsley, if desired.

Black Forest Sweet Heart Tarts

Ingredients:

  • 1 cup heavy whipping cream
  • 1/4 cup sifted powdered sugar
  • 1/2 teaspoon vanilla
  • 1 (8 ounce) can cherry pie filling
  • 1/2 teaspoon almond extract
  • chocolate curls (optional)
  • sliced almonds (optional)

Directions:

  1. Cut heart shapes from cake or use as is. Beat whipping cream and sugar until stiff peaks form; fold in vanilla.
  2. Combine cherry pie filling and almond extract.
  3. For each serving; spread cherry pie filling over cake heart shape.
  4. Top with whipping cream.
  5. Garnish with chocolate curls and slivered.
  6. Top with almonds, if desired.
